En este mes de enero, en el marco del Día Internacional de la Comida Picante La Montserratina<span style=”color:#363636″> invita a celebrarlo degustando sus ardientes productos como: el Chorizo Picante, la Morcilla Carupanera que es picante y dulce, la Salchicha Jalapeña y el Chorizón Jalapeño.

Cabe recordar que cada año mundialmente se rinde homenaje a esos condimentos que hacen de cada plato una auténtica experiencia culinaria, tales como los ajíes, los chiles y los pimientos, que también son muy populares y recomendados en la medicina natural para estimular la circulación sanguínea, la sudoración y mejorar la digestión.

La comida picante es uno de los sabores más populares de Latinoamérica, y Venezuela no es la excepción, por el contrario ese toque picantoso siempre es bienvenido en la gastronomía criolla.

Este condimento de ají es básicos en muchas preparaciones de nuestro país, razón por la cual La Montserratina lo ha incluido en varios de sus productos para el disfrute de sus seguidores.

En tal sentido, el gerente de Planta Las Tejerías de La Montserratina<span style=”color:#363636″>, Wilfredo Flores, explicó que en su producción para dar ese toque picante utilizan una pasta de ají, “todo es natural, no usamos químicos que lo que hacen es quemar la boca, estos productos dan olor y sabor, y pican lo que deben picar dependiendo del tipo de producto, por eso tenemos varios con este condimento”.

La gerente de Mercadeo de la empresa, Verónica Maduro, indicó que “el picante es importante para el paladar venezolano, ya que resalta el sabor de las comidas, de allí que se quisiera incluir esa diferencia tan positiva al sabor y la calidad de los productos de La Montserratina”, que se pueden encontrar en los anaqueles de los supermercados o bodegones, “listos para degustar y hay para todos los gustos, unos con un sabor picante más suave y otros un poco más fuerte, pero no es un picante invasivo sino para el deleite de los consumidores”.

Receta picante

Por su parte el Chef y Maestro Parrillero, Carlos Páez, señaló que el ají picante es fundamental en la cocina venezolana, por el sabor que despierta en las comidas y genera un grato recuerdo, ya que en el país ha diferentes tipos de ajís: el ají rosa, el jovito, “pero el que más sabor tiene es el ají margariteño, que no se da sino en la región insular”.

Destacó que la Morcilla Carupanera de La Montserratina tiene ese dulce característico del oriente del país, y “es la más consentida por los consumidores, por ese sabor que explota en la boca. También el Chorizón Jalapeño es un gustazo, con ese picante característico de México, exquisito”.

De allí que, para celebrar a la comida picante, Páez ofrece su propia receta con Chorizón Jalapeño, que se podrá degustar en los bodegones de La Montserratina Grill:

Nachos con Chorizón Jalapeño

Ingredientes:

Tortillas cortadas en slider
1 Chorizón jalapeño, cortado en unas 8 o 10 rodajas de 1 cm o medio centímetro de grosor, sin membrana
Queso Cheddar fundido
Pico e’ Gallo
Guacamole

Preparación:

Las Tortillas cortadas en slider, deben ser freídas a fuego mediano hasta dorar y luego secar el aceite con papel absorbente.
Al chorizón, sin la membrana, se corta en rodajas de grosor al gusto, y se lleva a la parrilla, hasta que se marque bien la grilla de la parrillera en cada rodaja, dándole vuelta por ambas caras, así libera un poco sus grasas, y eso potencia el calor y mucho más el sabor.
Para el pico e’ gallo: Se mezcla Tomate sin semilla y picado en trocitos, cebolla finamente picada, ajo triturado, perejil o cilantro picado pequeño, limón o vinagre y aceite de oliva para aderezar al gusto.
Para el Guacamole: un aguacate, se pica a la mitad, una mitad se tritura con tenedor o en licuadora y la otra mitad se cortas con cuchillo en cubos medianos, no tan pequeños. Agregar un punto de limón, ajo, aceite de oliva, cilantro o perejil picadito.
En un plantón colocar las tortillas, alrededor de un bol pequeño, donde se coloca el guacamole, coronándolo con un poquito de cilantro o perejil, y encima de las tortillas colocar el queso cheddar y seguidamente agregar encima los trocitos de Chorizón triturados con un cuchillo, seguido colocarles encima el Pico e’ gallo y luego otro poquito de queso cheddar encima.
